Episode 35: Veggie Fried Rice

Ingredients:

  • 1/2 onion, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup peas
  • 3 cups cooked rice (white or brown)
  • 1 cup firm tofu, chopped into cubes
  • 2 cloves garlic, diced
  • 1 tablespoon soy sauce
  • Olive oil
  • Green onions, diced as a garnish

Directions:

  • Stir-fry onions until tender
  • Add carrots and stir-fry until tender
  • Add peas
  • Add rice
  • Add garlic
  • Add soy sauce
  • Stir-fry until well-mixed then serve
