Episode 34: Vegan Donuts

Ingredients:

  • 2 cups flour
  • ½ cup sugar
  • ½ cup applesauce
  • 1 cup vanilla almond milk
  • 2 tablespoons olive oil
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 cup blueberries
  • Vegetable oil (if frying donuts)

Directions for baked donuts:

  • In a large mixing bowl, add the olive oil, almond milk, applesauce, and vanilla extract together and mix well
  • Add sugar and stir until sugar is completely dissolved
  • Add baking soda, baking powder, cinnamon, and nutmeg and continue stirring
  • Add the flour and stir until completely mixed
  • Grease a  muffin  tray and spoon the mixture into the muffin tray
  • Bake at 350 degrees for 10-15 minutes

Directions for fried donuts:

  • In a large mixing bowl, add the olive oil, almond milk, applesauce, and vanilla extract together and mix well
  • Add sugar and stir until sugar is completely dissolved
  • Add baking soda, baking powder, cinnamon, and nutmeg and continue stirring
  • Add the flour and stir until completely mixed
  • Add more flour and stir until you get a soft dough
  • Knead the dough and make into small rings that can fit inside the palm of your hand
  • Deep fry the donuts in vegetable oil over low-medium heat
