Episode 33: Alternatives to Mayonnaise

Option #1: Guacamole

Ingredients:

  • 3 avocados
  • 1 tomato, diced
  • Juice from half a lemon
  • ½ an onion, diced
  • 2 gloves of garlic, diced
  • ½ teaspoon cumin
  • ½ teaspoon cayenne pepper

Directions:

  • Carefully cut open the avocados
  • Spoon out the avocados into a large bowl
  • Add the lemon juice
  • Add the garlic and onion
  • Add the tomatoes
  • Add the cumin
  • Add the cayenne pepper
  • Mix everything well and transfer to a serving bowl

Option #2: Sunflower Hummus

Ingredients:

  • 2 cups of hulled sunflowers, soaked in water for at least 20 minutes
  • Juice of half a lemon
  • 2 cloves of garlic
  • ½ cup water

Special Equipment:

  • Blender

Directions:

  • Drain the sunflowers
  • Again, the dinosaur is there for no reason
  • Add the sunflowers to the blender
  • Squeeze in the lemon juice
  • Add the garlic
  • Add about ½ cup of water or so
  • Pulse the blender in short bursts, scraping down the sunflowers and adding more water when necessary to achieve a thickened consistency

Option #3: Cashew Cheese

Ingredients:

  • 1 cup of cashews, soaked in water for at least 2 hours
  • Juice from half a lemon
  • 4 tablespoons of nutritional yeast flakes
  • 2 cloves of garlic
  • ½ cup of water

Special Equipment:

  • Blender

Directions:

  • Add everything to the blender and blend until smooth
  • Chill in the refrigerator several hours before serving
