Episode 28: Vegetarian Curry (Version 02)

Ingredients:

  • 1 can of vegetable broth
  • 1 potato, peeled and chopped
  • 1/2 cup sliced mushrooms
  • 1/2 cup squash, chopped
  • 1 cup pureed or mashed carrots
  • 3 tablespoons Indian curry powder
  • 1/2 block of curry, chopped into cubes

Directions:

  • Pour vegetable broth into a pot and bring it to a boil
  • Add curry powder
  • Mix well and reduce heat to a simmer
  • Add carrots and mix well
  • Add potatoes
  • Put the lid on and simmer for 20 minutes
  • Add the squash
  • Put the lid back on and simmer for 15 more minutes
  • Add the mushrooms
  • Add the tofu
  • Mix well and simmer for 5 more minutes
  • Serve with bread or over a bowl of rice
