Episode 27: Thai Curry Spaghetti


  • ½ cup coconut milk
  • 1 garlic clove, minced
  • 1/2 cup tofu, chopped
  • 1/2 cup peppers, chopped
  • 1/8 cup onion, chopped
  • 1/2 cup of broccoli, chopped
  • 2-3 cups of spaghetti, cooked
  • 1 heaping tablespoonful of Masamun curry


  • Heat a frying pan on a stove to medium-high heat with some olive oil
  • Add the onions
  • Add the broccoli
  • Add the bell peppers
  • Stir fry the veggies until they start to get a little tender
  • Add the garlic
  • Add the tofu
  • When the tofu is seared enough, add the curry paste
  • Add the coconut milk and stir well
  • You can add a little more coconut milk if you like if you want a little more sauce
  • Add some spaghetti and stir fry until spaghetti is completely coated in sauce
  • Pour the spaghetti onto a plate and serve
