Episode 26: Vegan Meatballs


  • 1 cup ground nuts (e.g. walnuts)
  • 3 cups quick oats
  • 30 ounces red beans, drained
  • 2 cups tomatoes, chopped
  • 1 cup onions, chopped
  • 1 tablespoonful brown sugar
  • 3 tablespoonsful olive oil
  • 1 cup ground cereal of your choice
  • Dash ground pepper


  • Blend beans until you get a puree
  • Pour bean puree into a large bowl
  • Mix in the quick oats
  • Add the nuts, tomatoes, and onions then mix well
  • Add the brown sugar and mix well
  • Add the ground cereal and mix well
  • Add the olive oil and mix well
  • Add a dash of ground pepper
  • Set bean mixture aside for 5-10 minutes to thicken
  • May add more quick oats as needed to thicken mixture
  • Roll a spoonful of bean mixture into a ball shape and put on parchment paper
  • Bake 10-15 minutes at 350 degrees, turning the meatballs halfway through
  • Serve hot with your favorite sauce (e.g. BBQ sauce)
