Episode 24: Vegan Pancakes

Ingredients:

  • 1/2 cup wheat flour
  • 1/2 cup white flour
  • 2 tablespoonsful sugar
  • 2 tablespoonsful water
  • 2 tablespoonsful ground flaxseed
  • 1 cup soy milk
  • 1/2 teaspoonful baking powder
Directions:
  • Put the flaxseed into a small bowl and pour the water in
  • Mix well with a spoon – this will be our flax egg
  • Add wheat flour to a large bowl
  • Add the white flour
  • Add the sugar
  • Add the flax egg
  • Add the soy milk
  • Mix everything well
  • Batter should be slightly runny, but not too loose
  • Heat a pan on the stove over low to medium heat
  • Grease the pan with a little oil
  • Pour in the batter – the amount depends on the size of pancake you want
  • When the top looks a lttle dry and bubbly, carefully flip the pancke with a spatula
  • Serve with your favorite type of syrup
