Episode 21: Vegan Berry Bread

Ingredients:

  • 3 cups pancake mix
  • 1 & 1/2 cups soy milk
  • 1 tbsp ground flaxseed
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 3 tbsp oil
  • 1 cup berries of your choice

Directions:

  • Add pancake mix, soy milk, flaxseed, sugar, and oil to a bowl
  • Mix well to get a thick mixture
  • Add more pancake mix or soy milk as needed to get desired consistency
  • Fold in the berries and mix well
  • Pour mixture into an oiled baking dish
  • Bake at 400 degrees for 15 minutes or golden brown
  • Serve hot with your favorite berries
