Episode 140: Vietnamese Steamed Rice Cakes

Also known as bánh bèo

Special equipment:

  • Steamer
  • Lots of tiny dishes about 2.5 inches in diameter
  • Tray filled with thin layer of water and ice
  • Grater

Ingredients:

  • 1 package bot bánh bèo mix
  • 4 cups water
  • 5 green onions, chopped
  • 1/2 cup mung beans, soaked in water for an hour and drained
  • 1 shallot, roughly chopped and deep fried

Directions:

  • Cook mung bean
  • Mash mung bean
  • Roll mung bean into a ball
  • Shave mung bean with a grater
  • Sauté green onions in a lot of olive oil and set aside
  • Put the tiny dishes in a steamer
  • Mix the bot banh beo mix with water in a large bowl
  • Fill the dishes 3/4 full with batter
  • Steam for 7 minutes
  • Carefully transfer dishes to ice water bath (do not get the cakes wet)
  • Remove the cakes and arrange on a plate
  • Sprinkle with sauteed onions, mung bean, and fried shallots
  • Serve hot with soy sauce or vegetarian fish sauce
