Episode 139: Vegan Shrimp Cake

Note: Does not taste anything like shrimp!

Special equipmet:

  • Muffin cups and tray

Ingredients:

  • 1 package fried shrimp cake powder
  • 1/2 cup mung beans, soaked for an hour in water and drained
  • 1/2 cup onions, chopped
  • 3 small taro, peeled and chopped
  • 1 carrot, peeled and cut into thick slices
  • 2 cups water

Directions:

  • Mix fried shrimp cake powder with water in a large bowl
  • Fill half a muffin cup with the batter
  • Add a few pieces of taro
  • Add some mung bean and onion
  • Add more bater to fill the muffin cup
  • Top with a carrot slice
  • Bake at 400 degrees for 10 minutes
  • (Alternatively, may steam in ramekins dishes instead of baking in muffin cups)
  • Carefully remove the cakes from the muffin cups
  • Fry until golden brown
  • Serve hot with soy sauce
