Episode 133: Vegan Chickpea Egg Muffins

Ingredients:

  • 1 cup chickpea flour
  • 1/2 teaspoon black salt (kala namak)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon baking powder
  • 1 cup water

Directions:

  • Mix all the ingredients together
  • Heat a pan on the stove with some oil over medium heat
  • Add the chickpea mixture
  • Stir constantly for 3-5 minutes until desired consistency
  • Spoon a generous amount over a toasted English muffin
  • Add a slice of cheddar cheese if desired
  • Serve hot
