Episode 124: Hand-Cut Noodles

Special equipment:

  • Stand mixer
  • Pasta rack

Ingredients:

  • 400 grams flour
  • 1/2 teaspoon salt
  • 208 grams water

Directions:

  • Add flour to a mixing bowl
  • Add salt
  • Set the mixer on level 2 speed
  • Slowly add water to the mixing bowl
  • If the dough seems a bit too dry, wet your hands and gently knead the dough
  • Switch to the hook attachment and knead at a higher speed for 10 minutes
  • Wrap the dough in plastic wrap
  • Allow the dough to rest for an hour or so
  • Cut the dough into fourths
  • Run the dough through the pasta attachment a couple of times at setting level 4
  • Hang the dough sheets on a pasta rack
  • Cut the dough sheets into large sized noodles
  • Put the noodles in a bowl of flour, so they don’t stick to each other
  • Boil the noodles in water until they are slightly firm
  • Serve with your favorite broth and veggies
