Episode 113: Taro Buns

Ingredients (filling):

  • 1 large taro root
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 tablespoon agar powder

Ingredients (dough):

  • 1 tablespoon yeast
  • 1 teaspoon sugar
  • 2 & 1/2 cups flour
  • 1/4 teaspoon sugar
  • 14 cup sugar
  • 1/2 cup soy milk
  • 1 egg, beaten (optional)

Directions:

  • Peel taro and boil in 4 cups of water for 15-20 minutes until tender
  • Take out 1/2 cup liquid to use later
  • Mash taro up and put in large bowl
  • Add 1/4 teaspoon salt and 1/2 cup sugar
  • Mix the taro water with agar powder
  • Add taro water mixture
  • Mix well until taro is smooth
  • Set filling aside
  • Mix 1/4 cup water with yeast and 1 teaspoon sugar
  • Allow yeast mixture to sit 5-10 minutes until it gets foamy
  • Drizzle oil into a mixing bowl
  • Add flour, 1/4 teaspoon salt, and 1/4 cup sugar
  • Add yeast mixture
  • Mix well
  • Add soy milk (and egg)
  • Mix well
  • Let dough rest for 2 hours
  • Shape the dough into a log
  • Cut dough into 8 pieces
  • Roll pieces into small balls
  • Flatten each ball into a circle
  • Scoop some taro and place in middle of circle
  • Pinch dough together to form a ball
  • Let taro buns rest for 1/2 hour
  • Bake buns at 350 degrees for 15-20 minutes
