Episode 71: Spiced Carrot Pudding

Ingredients:

  • 1 tablespoon coconut oil
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 2 cups shredded carrots
  • 1 tablespoon sugar
  • 1 cup soy milk

Directions:

  • Melt coconut oil in small pot over medium heat
  • Add ground nutmeg, cinnamon, and cardamom
  • Lightly stir until oil becomes very fragrant
  • Add 2 cups of shredded carrots and mix well
  • Add sugar and mix well
  • Slowly add soy milk and reduce heat to simmer
  • Simmer for 15-20 minutes, stirring occasionally
  • Allow the pudding to cool for at least half an hour
