Ingredients:
- 1 tablespoon coconut oil
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 2 cups shredded carrots
- 1 tablespoon sugar
- 1 cup soy milk
Directions:
- Melt coconut oil in small pot over medium heat
- Add ground nutmeg, cinnamon, and cardamom
- Lightly stir until oil becomes very fragrant
- Add 2 cups of shredded carrots and mix well
- Add sugar and mix well
- Slowly add soy milk and reduce heat to simmer
- Simmer for 15-20 minutes, stirring occasionally
- Allow the pudding to cool for at least half an hour
