Episode 49: Blueberry Waffles

Ingredients for waffles:

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 cup apple sauce
  • 1 & 1/2 cups soy milk
  • 1 tablespoon olive oil
  • 1/2 cup blueberries
  • 1 pinch salt
  • 1 tablespoon agave

Ingredients for blueberry sauce:

  • 1/4 cup (+ 3 tablespoons) water
  • 1 cup blueberries
  • juice from 1/2 lemon
  • 2 tablespoons agave
  • 1 tablespoon cornstarch

Special equipment:

  • Waffle iron

Directions for waffles:

  • Add flour, baking powder, and salt to a large bowl and set aside
  • Add applesauce, soy milk, olive oil, and agave to a bowl and mix well
  • Add the applesauce mixture to the flour mixture and mix well
  • Carefully fold in the blueberries without crushing them
  • Heat waffle iron and pour enough mixture to cover iron
  • Cook until down (time may vary with the brand of waffle iron)

Directions for blueberry sauce:

  • Heat a small pot on a stove over medium heat
  • Add 1/4 cup water
  • Add the blueberries, lemon juice, and agave
  • Mix cornstarch with 3 tablespoon water in a small bowl
  • Lower heat then pour in cornstarch mixture
  • Stir well until sauce is thickened
  • Serve over the waffle
