Episode 37: Chana Tikka Masala

Ingredients:
  • 1 teaspoon crushed coriander
  • Olive oil
  • ½ a medium onion, chopped
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 & ½ cups of pureed tomatoes
  • ½ can of coconut milk
  • 1 cup of chickpeas
  • 1 cup of sweet potatoes, peeled and chopped

Directions:

  • Stir fry the crushed coriander in olive oil over low to medium heat
  • Add the onions and stir fry until they begin to become tender
  • Add some olive oil to one part of the pan then add the garam masala, cumin, curry powder, and paprika
  • Add the tomato puree and mix well
  • Add the coconut milk
  • Add the chickpeas
  • Add the sweet potatoes
  • Simmer for 10-15 minutes
  • Serve with some naan and top with cilantro
