Episode 79: Cauliflower Meatballs

Ingredients:

  • 1/2 cauliflower, chopped
  • 1 zucchini, split in half lengthwise
  • 1 cup oats
  • 1 cup rice, cooked
  • 2 tablespoons Italian seasoning

Special equipment:

  • Blender

Directions:

  • Roast the cauliflower and zucchini at 375 degrees for 20 minutes
  • Grind the oats into flour
  • Put the cauliflower and zucchini into a blending device and puree
  • Put the vegetable mixture in a large bowl
  • Add the flour
  • Add the rice
  • Add the Italian seasoning
  • Mix well and shape into meatballs
  • Bake at 375 degrees for 25 minutes
  • Serve with your favorite sauce
